The staple food of Kerala is greatly influenced by the history and culture of the state. The dish is prepared by marinating the fish in a mixture of lemon juice, red chillies, and other ingredients, and then wrapped and baked in plantain leaves.
Chatti Pathiri:
A layered pastry made in Northern regions of Kerala, Chatti Pathiri is similar to the Italian lasagna. Flat breads or pancakes made out of flour, eggs, oil and water are used instead of cheese sheets. Chatti Pathiri is filled with sweetened beaten eggs, nuts and raisins, and is seasoned with cardamom. This water is made by boiling the heartwood of Pathimugam tree (East Indian redwood or ‘sappan wood’), a multipurpose tree which is popularly used for various medicinal purposes in Kerala. Pathimugam is being widely used since ancient days and is considered an excellent herbal medicine.
Palada Payasam:
Palada Payasam is a sweet rice kheer prepared with palada. The dish is usually prepared
and served during auspicious occasions and festivals like Onam. Among the many varieties of payasam, Palada Payasam is the most popular and is made out of basic ingredients like rice ada, milk, sugar, and ghee.

Rajasthani cuisine

The Indian state Rajasthan has an aesthetic cuisine, the Rajasthani cuisine also known as the Marwari cuisine. This cuisine comes from the arid nature of the state. Rajasthan is a deserted area where there is scarcity of water and vegetation so, it also has a very unique cooking style which is very different from other Indian cuisines. The specialty of this food is that although it emerges due to its specific climatic conditions it is suitable for all other climates as well. The authentic ingredients are such that a very few cuisines around the world use them. For example bajra, jowar, wheat, ghee, makki (corn flour) etc. Ghee is the most important part of the Marwari food mainly because of the combative nature of the people and the extreme climatic conditions of the region. These ingredients are specified to this region and cannot easily be found everywhere. Also, ingredients are such that it can conserve water usage while cooking and so dairy products were used as substitutes which is one of the main reasons for the food to be yummy and delicious.  
Dal-baati churma The most widely recognised Rajasthani food. It’s a plate which comprises of a round wheat bread fried in ghee (baati), lentil cooked with onion garlic and tomatoes (dal), and a mixture of baati broken into small pieces with jaggery and ghee (churma). The combination of these 3 makes it a perfect stomach-filling platter with bread sweet and the most authentic Rajasthani spices in it. It is one of the most typical and royal food of the Rajasthani cuisine. 

MalpuasMalpuas is a sweet dish emerged  from Pushkar (district of Rajasthan). Malpuas are sweet pancakes made with wheat flour batter, soaked in syrup made of jaggery or sugar and garnished with Rabdi. It is known as the most special and ‘shahi’ sweet of all Rajasthani sweets.
Pyaaz ki Kachori 
Pyaaz ki Kachori translated as onion Kachori. It is a breakfast as well as a snack in the Rajasthani cuisine. It’s a fried dough filled with onion masala (onion with spices). It is usually served with chutneys like sweet chutney (made of tamarind) and green chutney(made of mint).It is the most basic and delicious snack of the Rajasthani cuisine.

The Goan fish curry also known as the Xitti Kodi is the staple food of every Goan. it is a coconut based curry loaded with spices. Instead of Pomfret, Kingfish or any other fish available may also be used. This curry is eaten along with rice.

Goan Pork Vindaloo

‘Vin’ is derived from the word vinegar and ‘ahlo’ means garlic in Portuguese. It is also believed that the dish was named so because of the use of potatoes in making it. The dish is made of pork, stir fried onions, chillies, garlic sauce along with Vinegar and a blend of Indian and Portuguese spices. The curry base is made using chillies and other spices along with a few other ingredients and is then mixed with meat and vinegar. This mix is marinated overnight. The dish is then finished with fried onions and the other herbs. The longer the dish sits, the better it tastes as the flavour of the meat gets blended properly and absorbs the flavours of the spices and the curry base of onions, chilli and garlic

Bebinca

Bebinca is the most famous and loved dessert of Goa. it is prepared using coconut milk, sugar and eggs and is a multilayered cake. It almost resembles a multilayered pancake and is textured like pudding. The batter made of flour, sugar, ghee, eggs and coconut milk is poured into a pan and backed by a layer before lining it. Between each layers there is present a spread of caramelised sugar which gives it a much more interesting flavour.
